A story of Heritage and Love
My passion for baking started when I was just a little girl, standing on my tiptoes to peek over the kitchen counter as my mother and grandmother worked their magic with flour, water, and love. I still remember the smell of freshly baked bread filling our home — comforting, warm, and alive.
What fascinated me most was the sourdough starter. They treated it almost like a family member — feeding it every evening, checking its bubbles, talking about how strong or quiet it seemed that day. To me, it was something mysterious and alive. When I was small, I wasn’t allowed to touch it — “not yet,” they’d say — until the day I was finally ready to take part in the ritual.
That’s when I truly fell in love with the process: feeding, nurturing, waiting, and watching it come to life. And when that well-cared-for starter turned into a golden, fragrant loaf, it felt like magic.
Years later, life and family decisions brought us to the United States — a dream we had always shared. Along with our luggage, we carried a precious piece of home: our sourdough starter, Lolito. He’s been alive for more than 30 years and has become part of our family story. Every loaf we bake begins with him — a living link between our Italian roots and our new life here.
Through La Bolla Bakery, we hope to share a piece of that tradition — honest, naturally leavened breads made with care, patience, and respect for time. Each bake is a way to bring the warmth of our Italian home to your table, one loaf at a time.
The Meaning Behind “La Bolla”

La Bolla — “the bubble” — carries more than one meaning. In the language of bread, it is a sign of life.
It’s the tiny, delicate bubble that forms during fermentation — the quiet proof that your dough is alive, strong, and ready. For us, that single bubble captures the most magical moment in baking: when something simple and still begins to breathe.Inside our sourdough starter, the same bubbles rise and dance — small signals of life, energy, and care. They are the heartbeat of every loaf we bake, a daily reminder that great bread takes time, attention, and love.

La Bolla is also our little world — a space where family, tradition, and passion come together. It’s where memories of home meet the excitement of new beginnings, and where every loaf tells the story of both.
For us, La Bolla isn’t just a name. It’s a symbol of growth, life, and connection — the beautiful simplicity of something living, shared, and made by hand.
